I'm Bear, I live in Ajman and I would like first to thank istara for creating this group. My mission with this posting is to educate all the guys that read it. Guys, Ladies love a man who can cook, and I'm not talking about Canned baked bean and instant Mashed potatoes. This recipe right here is not only my pride and joy, but one of my secret weapons. Ladies, This doesn't mean that I don't want you to try it out as well, and while we're at it, I should like some feedback.
This here is a wonderful, nutritious, and all around health conscious meal. Shredded Italian chicken with white rice, and Asparagus.
Easy Italian dressing
1 cup Virgin Olive Oil (I suggest Najala Olive Oil)
1/2 Cup Gape Cinder Vinegar
1 Table spoon oregano
1 Pod garlic
1 Table Spoon Sweet Red Pepper
1 Tea Spoon Ground black pepper
1/2 Tea Spoon Honey (I suggest Al Shifa)
Combine the Olive Oil and Vinegar in a bowl or bottle (depending on what is available). Throw in Oregano and black pepper.
Prepare a saute pan on low heat with just a little olive oil. Cut the Growing end (not the root) off the Garlic pod evenly. Then place in the pan for about 5 minutes.Cooking tip! - This process will make it much easier to skin the cloves!
While the garlic is heating up. Clean the Sweet Pepper removing all seeds and the stem. Then Finely dice into tiny cubes. Throw the cubes into the dressing base. Save the rest of the pepper!
The garlic should be ready now. gently squeeze the root end and the cloves should come out very easily. then finely chop them and add them to the base.
Mix it well and plop it into the fridge for at least 24 hours so the flavors can properly mingle.
Shredded Italian Chicken
5 Chicken Breasts
Ground Black Pepper
With this recipe, figure on about 1 1/2 breasts per person as they tend to lose volume in cooking.
This bit is a little tough and requires a little bit of work. Prepare 2 pans on a middle to high heat (enough to sear the chicken) with a drizzle of olive oil. The first pan is for the initial cooking of the chicken (it's not needed but I find it takes away from the preparation time). Place 1 breast at a time in a pan, and let it cook golden brown before turning it over. once the chicken is browned on both sides, move it to the other pan and use 2 forks to shred the chicken to bits (use one fork to hold the chicken still and the other to rake away at it. Once the breast is shredded, leave it in the pan to thoroughly cook until dark brown. Once it's done, put it into a bowl and repeat until all chicken is cooked.
Once your chicken is done, put it all into a nice big pot on a high heat. add your 1/2 of your Italian dressing mixture, and stir it up. The dish is not ready until the chicken is almost crisp.
Voila! Shredded Italian chicken. The rice is easy. Put 1 cup of cleaned white rice into a pot with 2 cups of water and a tea spoon of Olive Oil. Boil it until the water is gone, 1 cup of rice is enough for 4 people. And the asparagus should be sauteed in a pan with a little bit of butter, salt, and pepper. Important rule! Asparagus or any vegetable should be a little crisp, there is nothing nastier than overcooked vegetables. Put it all nicely on a place. Use the Sweet pepper as a nice garnish on the rice, maybe a little fresh mint or coriander/Cilantro.
There you go. Plan a date, have a good conversation with the lady as you cook. then move to the living room and watch a good movie (I suggest A Beautiful Mind, Sleepless In Seattle, or Scent Of A Woman). Turn down the lights, make sure you have a huge soft blanket, and hot coco ready to heat at any moment. Enjoy!
